Almost homemade pasta sauce, no meat added

Ingredients
2 cups fresh mushrooms, chopped1 cup frozen pepper stir fry veggies1 cup onions, chopped2 tsp fresh garlic, minced1 tbsp Italian seasoning, no salt added24 oz jar of your favorite pasta sauce2 - 14.5 oz can stewed tomatoes, no salt added, crushed 1 - 14.5 oz can diced tomatoes, no salt added1/3 cup frozen spinach, thawed and excess water removed
Directions
Prepare all vegetables.

In a 5 quart nonstick stock pot add mushrooms, stir fry peppers, onions and garlic. Saute until veggies are softened, about 5 minutes. Add Itailian seasoning and continue to saute for another 5 minutes. Add all tomato products and spinach; bring to a boil and then decrease heat to low and simmer for 1.hour.
