Crab Stuffed Poblano Peppers

Poblano Peppers, 4 largePepper Jack Cheese, 3 oz shreddedBetter Than Cream Cheese Tofutti, 8 oz packageOnion, 1/2 small, choppedOlive Oil Blue Crab, 8 0z
Roast poblano peppers on the grill or under the broiler to char skin. Place in a plastic bag, allow to cool. Once cool, remove stem and seeds, leaving as much of the pepper in tact as possible.
Heat olive oil in a small saute pan, and saute onion until very soft.
Preheat oven with 425 degrees F.
In a medium bowl, combine Better Than Cream Cheese Tofutti, grated cheese, sauteed onions, and crab. If filling is bland, add some lime juice or chopped chile peppers.
Stuff the crab mixture into the prepared poblano peppers.
Bake for 15 to 20 minutes, or until stuffing is heated and bubbling.
