Slow Cooker Chicken Marrakesh

Ingredients
1 onion, sliced2 cloves garlic, minced2 large carrots, peeled & diced2 large sweet potatoes, peeled & diced1 (15 oz can) garbanozo beans, drained2 lbs skinless, boneless chicken breasts, cut into 2-in pieces1/2 tsp ground cumin1/2 tsp ground turmeric1/4 tsp ground cinnamon1/2 tsp ground black pepper1 tsp dried parsley1 tsp salt1 (14.5 oz can) diced tomatoes (driain for a less soupy finish)
Directions
place onion, garlic, carrots, sweet potatoes, garbanzo beans, & chicken in slow cooker. In a bowl mix all spices. Sprinkle spices over chicken/vegetables. Pour in tomatoes and stir to combine.

Cover cooker, set to high and cook until seet potatoes are tender and the sauce has thickened 4-5 hours.

    I found this recipe on allrecipes.com a couple of years ago and it is one of my favorites! We add a 1/2 tsp each of curry and cayenne to kick it up! It freezes very well. I was so glad to see it here so I could find out the nutritional content! - 11/7/12
