Polish Sausage Stir Fry

Ingredients
16 oz kielbasa sausage14 oz bag cole slaw mix1 fennel bulb, sliced1 small onion, diced2 small apples, sliced1 tbsp olive oil1/4 cup apple cider vinegar1/4 cup apple cider or apple juicesalt & pepper to taste
Directions
Slice kielbasa in 1/4 inch slices. Set aside.

In large skillet or wok, heat olive oil over high heat and add onions, fennel & cabbage. Cook until mix has decreased in volume by about a quarter and cabbage starts to brown. Add sausage & apple and cook for another 5 minutes.

Add cider vinegar and apple juice, salt & pepper and cook another 5 minutes until liquid is mostly evaporated and thickened.

Enjoy with roasted potatoes!
