Deceptivly Delicious Peanut Butter Banana Muffins

1 Cup brown sugar, divided in half1/2 Cup Peanut Butter1/2 Cup Carrot puree1/2 Cup Banana Puree1 Large Egg White1 Cup Whole Wheat Flour1 tsp Baking Soda1 tsp Baking Powder1/2 tsp Salt
Preheat oven to 350 degrees.
In a large mixing bowl combine 1/2 c brown sugar, peanut butter, carrot and banana puree and the egg white.
Put the flour, baking powder, baking soda and salt in a ziploc and shake. Add to the wet ingredients, stir until combined, may be lumpy. Stir in brown sugar, maybe 3 or 4 stirs. Divide the batter among the muffin cups and bake for 15-20 minutes. These taste like Peanut Butter Cookies so make sure to have your milk ready! Thank you to Jessica Seinfeld for this recipe!
