Jen's Butternut Squash Soup

Ingredients
1 Butternut Squash,peeled, seeded and cubed1 onion, peeled and quartered1 baking potato, peeled and quartered2 T olive oil4 Cups of chicken broth1/4 cup of unpacked brown sugarsalt and pepper to taste
Directions
Toss squash, onion and potato in a 9x13 pan with the olive oil and season w/ salt and pepper to taste. Roast in a 400 degree oven for 45 min- 1 hr. until tender. Place in large pot with broth and bring to a simmer over Med-high heat. Take off heat and w/ and immersion blender (or food processor in 2 batches) puree until smooth. Stir in brown sugar. ENJOY!
