Summer sausage & veggies

Ingredients
Hillshire Farms lite Summer sausage 1 pound link Large sweat onion chopped into bite size piecesLarge green bell pepper chopped into bite size piecesLarge tomato cut into eight wedgesCan of pineapple chunks in its own juice drained but reserve 2 table spoons of juice to fry sausage.
Directions
Cut sausage into thin slices. Fry in 2 table spoons of pineapple juice until sausage is hot. Drain sausage and return to pan next add chopped onions and bell pepper and and heat until onion and peppers just start to become soft, about 2 or 3 minutes. Next add the tomatoes and pineapples cook just long enough to heat the tomatoes and pineapples

Serve with side salad

    We made this tonight to use up a roll of summer sausage we'd gotten at christmas time. My kids and I really like it. It's light-weight without being a summertime only meal. We will definitely be making this again! - 1/4/12
