wild rice and cranberry salad

Ingredients

6 1/2 cups of water1/2 chicken broth2 1/2 cups wild rice (rinsed)1 1/2 cups dried cranberries1 cup green onions2 Tbs orange peel1 cup orange juice1/2 cup cider vinegar1/2 olive oil1 1/2 cups raisins3/4 cup toasted pine nuts1/2 cup parsley or 1/2 tsp dried
Boil water and broth and add rice, lower heat and cook aprox 30 minutes until rice is tender
Drain and cool
Whisk together orange juice and vinegar, adding oil gradually
Mix together and let sit for 1 hour.
Mix in orange peel, cranberriesm, raisins etc.
