Chicken Quinoa Stew

Ingredients
8 skinless chicken thighs (~3 lbs.)1 medium onion2 large carrots1 tbsp chili powder1 can or 2 c. chicken broth28 oz. crushed tomatoes1 cup quinoa, rinsed1 medium potato1 bag baby spinach (6 - 9 oz.)
Directions
Brown chicken thighs, then add onion, carrot, and chili powder. Cook until vegetables have softened slightly. Add chicken broth, tomatoes, potato, and quinoa. Bring to a boil, then simmer partially covered for 30 - 40 minutes. A couple minutes before serving, stir in the spinach and let it wilt.
