Raspberry Muffins

Ingredients
1 3/4 c sugar1/4 c canola oil1t lemon zest2 eggs1 c low-fat blend ( 1/2 c plain lowfat yogurt ad 1/2 c lowfat cottage cheese liquefied in a blender)2 1/2 t vanilla extract2 t fresh lemon juice1 c flour1c whole wheat flour1 T baking powder1 pint rasberries
Directions
preheat oven to 350 mix in a large bowl sugar, oil and zest. Add the eggs, mix completely. Add the lowfate yogurt/cottage cheese blend, vanilla, lemon juice and combine.
slowly add the flour and the baking powder. When batter is smooth , add the raspberries and gently mix. Place in paper cups in a muffing tin. Bake for 25 minutes
Can also use blueberries
