Southern Grilled Green Tomatoes with Goat Cheese

Ingredients
Green Tomatoes, 4 large, sliced into 1/2" slicesLimee Juice, .09 cup (remove) *Kosher Salt, .5 tsp (remove) Pepper, black, .5 tsp (remove) Pepper, red or cayenne, .125 tsp (remove) Cilantro, raw, 2 tbsp (remove) Scallions, raw, .3 cup, chopped (remove) Olive Oil, .5 cup (remove)
Directions
Prepare grill for med-hot fire. In a shallow bowl, combine olive oil, lime juice, salt, pepper, cayenne and cilantro. Stir until well blended. Dip tomato slices into mixture and transfer to grill. Grill 3-4 min, turn and top each slice with a heaping tablespoon of goat cheese. Cook another 2-3 min, or until cheese begins to melt. Transfer to a serving platter and top with chopped green onions. Serve immed.
