Eggplant/Chicken Parmesan

Ingredients
1 pound ground chicken, lightly fried with salt and pepper1 medium eggplant2 16 oz. cans tomato sauce seasoned with italian seasoning, red pepper flakes, salt, pepper, minced garlic1 cup grated parmesan cheese and 1 cup grated mozarella cheese mixed together
Directions
Layer ground chicken, lightly fried in 1 tsp olice oil, salt and pepper, spread in 9X12 baking pan, sprinkle 1/2 of mixed parmesan and light cheddar cheese over chicken, add a layer of 1" sliced raw eggplant (slice so each slice has seeds in it).
Mix 2 16 oz. cans of tomato sauce with italian seasoning,
(to taste) and the garlic, onion, ered pepper, salt and black pepper.
pour over the ingredients in the 9 X 12 pan
Sprinkle the remainder of the cheese on top.
Bake 350 for 60 mins or till done when tested with a fork.
