Dory Pho

Ingredients
1 Dory Fish Fillet (or other white fish, about 300g)2 Onions, dicedGinger Root, 2 tsp minced2 Green Chili Peppers (Siling Labuyo) - sliced1/2 cup spring onion, diced4-6 Bok Choy / Chinese Pechay, sliced3 Garlic cloves, mincedRice Noodles, 200 grams1 Carrot sliced1/2 cup shitake mushrooms1 Chicken Bouillon cube (or beef if you prefer)6-8 cups water
Directions
Add the water, broth, onions, garlic, ginger, peppers into a pot and bring to a boil. Then add carrots, mushrooms and fish and allow to boil again. Then add rice noodles, bok choy and fish and allow to simmer for 5-10 more minutes. Season with salt and pepper based on taste. Service with fresh lemon squeeze, mint leaves and toge / bean sprouts and season with hoisin sauce and chili sauce if desired.
