EZ Low Fat Caramel Flan

Ingredients
* 1 1/3 c sugar * 3 eggs, beaten * 1 1/2 c non-fat milk * 1 tsp. vanilla
Directions
In a heavy saucepan, cook 2/3 cup sugar over med-high heat, until sugar begins to melt. Shake occasionally, but DO NOT STIR. Reduce heat to low and cook until sugar is golden brown- stirring frequently. Divide melted sugar (caramel) into 4 individual 6oz custard cups. Tilt cups to distribute caramel evenly along the bottom. Let cool. While cooling, combine eggs, 1/3 cup sugar, and vanilla. Beat until well combined, but not foamy. Distribute evenly among custard cups (~1//2 cup each), pouring over caramel in the dish. Place in oven, situated in a larger 2 inch high baking pan filled 1 inch with water. Bake at 325F for 35-45 minutes. The flan is done when knive inserted in middle comes out clean. Once done, let stand for 30 minutes or till cool. To serve, slide knife around flan to disengage from sides. You may need to place dish in a bowl of warm water to loosen. Once loosened, invert onto dish and serve.
