Introduction

This is a cake originating in costa rica and nicaragua. Many people use it in mexico also. It isn't the best for you but is a great treat. It is very moist and is great with fruit on the top! Ingredients

    5 eggs seperated
    1 c sugar
    1/2 tsp vanilla
    1 tsp baking poweder
    1 1/2 c flour
    12 oz can evaporated milk
    14 oz sweetened condensed milk
    1 c whole milk
    1 1/2 c heavy cream
    1/3 c powdered sugar
    1 tsp vanilla

Directions

Preheat oven to 350 degrees. butter a 9" x 13" baking pan. In a mixing bowl beat egg yolk, sugar, and 1/2 tsp vanilla on high speed until light and fluffy. In another bowl, beat egg whites to soft peaks. using a rubber spatula, fold whites in to yolks until almost combined. Gently fold in baking powder and flour (do not overmix). Spread batter in prepared pan. Bake 30 minutes until golden and pulling away from the side of the pan, or toothpick comes out clean. cool for 20 minutes and pierce all over. In medium bowl wisk together the three milks. Pour evenly over the cake. cover wiht plastic wrap and refrigerate for at least 1 hour and up to 1 day. To serve, whip heavy cream to soft peaks. Add powedered sugar and 1 tsp vanilla. Spread over cake.
