baby spinach and tomato salad with tamarind dressing

Ingredients
Nakano Seasoned Rice Vinegar, 2 tbsp *Extra Virgin Olive Oil, 4 tbsp *Soy Sauce, 1 tbsp Tamarinds, 10 grams Honey Mustard, 1 tspBaby Spinach Salad, 2 oz (60gm)Red Ripe Tomatoes, 1.5 cup cherry tomatoes* Tamarinds sauce and rice vinegar from Asian grocers.* this is quite good match with garden salad or simple tomato and spinach salad.
Directions
serves 4 as a sides

1. For dressing
combine all ingredients except olive oil in a bowl.
whisk well and add olive oil continuously.

2. Add the tomatoes to the baby spinach, and gently toss to combine with dressing.
