1 package Jello Fat Free, Sugar free pudding mix1 1/4 cup skim milk1 15 oz can plain pumpkin8 Lotus Biscoff cookies1 1/2 cups light whipped topping1 tsp pumpkin pie spice
in a mini muffin pan, put mini cupcake liners. Cut biscoff cookies into 6 pieces each. Place each piece in bottom of mini muffin liner. Next, mix milk and pudding mix together, then add pumpkin pie spice and pumpkin. Mixture will be like thick cake batter. Put mixture into ziploc type baggie. Cut corner off of bag and pipe mixture into each cupcake liner. Refrigerate to let firm, approx 2 hours.
