Buckwheat crepes

Buckwheat, 2 cup Egg, fresh, 2 large Milk, 1%, 1 cup Water, tap, 1 cup (8 fl oz) *Canola Oil, 1 tbsp (spray)
Put the buckwheat flour in large bowl. Make a little well in the middle and put the 2 eggs in the well.
Mix flour and eggs thoroughly, then add water and milk slowly until obtaining homogenous batter.
Let sit for about 2h.
Coat hot flat pan with oil, and pour 1 large laddle of the batter and cook until the crepe does not attach to the pan, then flip it over and cook for about a minute.
Add any savory ingredient (eggs, mushrooms, ham, cheese...) and enjoy.
Makes ~10 crepes
