Banana Raisin Bran Mini Muffins

Ingredients
2 Cups Bran Flakes1 1/4 Cup Almond milk1/3 Cup Raisins1 Ripe Banana------------------------------1/2 Cup White Flour1/2 Cup Whole Wheat Flour1/3 Cup Sugar2 TBSP Flax seed1 TSP Salt1 TBSP Cinnamon1 TSP Cardamom1 TSP Baking powder--------------------------------1 Medium Egg5 TBSP Vegetable Oil--------------------------------1/2 Cup Chopped Walnuts
Directions
Preheat Oven to 325 and grease mini muffin pan with vegetable oil.

Combine bran flakes, raisins, and milk. Let sit for 3 minutes to soften cereal. Add mashed banana. In a separate bowl, combine flours, sugar, baking powder, cinnamon, cardamom, flax, and salt. Add oil and egg to cereal mixture. Slowly mix in dry mixture to wet. Add nuts.

Bake for 8 minutes or until toothpick comes out clean. This will make 36 mini muffins.
