Cecil's Pasta & Turkey Sausage Bake

Ingredients
2 c. canned crushed tomato4 serving whole wheat rotini (224 grams dry)1/2 c. ricotta cheese, part skim1.5 c. low fat cottage cheese2 c. chopped colored peppers (red, green, orange, yellow)1/2 yellow onion4 tbsp. minced garlic1.5 tbsp. Italian seasoning.5 tsp. crushed red pepper8 oz. smoked turkey sausage1 c. shredded mozzarella cheese, part skim
Directions
Prepare pasta according to package. Drain and set aside.
Saute peppers and onions on stove. Set aside.

Mix crushed tomato with Italian seasoning and crushed red pepper. Use a small amount to cover bottom of 9x13 baking pan.

Mix pasta, ricotta cheese, peppers, onions, and cottage cheese. Spread mixture evenly in pan.

Slice turkey sausage and cover pasta in pan. Cover with remaining crushed tomato sauce. Cover with mozzarella cheese.

Bake at 350 for 20-25 minutes.
