Pork and Broccoli Quiche

Ingredients
* 2 lbs Pork Tenderloin, chopped into small-to medium chunks * 4 cups cooked Broccoli, chopped * 1 Large Onions, chopped * 32 oz. carton of Egg substitute * 1 1/2 cups shredded Cheddar Cheese * 1 1/2 lbs Seasoned French Fries or tater tots * 1/4 cup fat free or lowfat sour cream * Salt and Pepper, to taste * Onion Powder * Garlic Powder * Dried Basil or other savory herb
Directions
Preheat oven to 425 degrees, place Seasoned Fries in bottom of 9 x 13 baking pan and cook according to directions on package. When crispy and done, smash until they cover the bottom of the pan.

Season pork chunks with salt, pepper, garlic powder, onion powder, and herbs. Cook on a medium-low stovetop for about 20 minutes, stirring chunks until thoroughly done and browned.

Meanwhile, mix chopped onion and broccoli in a large mixing bowl. Mix in cooked pork. Pour all into pan lined with fries.

Mix whole carton of liquid eggs with sour cream and 2/3 cup of water. Beat with a whisk. Pour mixture over vegetables and pork. Sprinkle cheese over the top.

Bake for 45 minutes until cheese begins to brown. Cool slightly, but serve hot.
