Cream of Cauliflower Soup

Ingredients
12 oz. Cauliflower, raw,1 oz. Scallions, raw1 T. Celery, raw1 T. Butter, salted1 1/2 C. Chicken Broth1/4 C. Heavy Whipping CreamSalt and pepper to taste
Directions
Saute onions and celery in the butter until fully cooked and soft. Add cauliflower and broth and simmer until tender about 25 minutes. Puree until smooth then add cream and warm. Check to see if you need more s & p. Serve with toppings like bacon, cheddar cheese, green onions and/or sour cream.
