Pumpkin Cake truffels

Ingredients
Directions
For the cake:1 package spice cake mix1 cup canned pumpkin puree1 cup waterFor the Frosting:1 package 1/3 fat cream cheese1/2 cup canned pumpkin puree1 tsp. vanilla extract1 tsp. pumpkin pie spice1 tsp. cinnamon5 Tbsp. Packed brown sugarFor the Coating:1 package white chocolate chips
Add pumpkin and water to cake mix and follow directions to bake. ( You do not have to add eggs or oil) Let cake cool.
Mix all ingredients for frosting, whip until fluffy and smooth.
Crumble cake into large bowl and add frosting. Mix well.
Cool mixture in the fridge until firm.
Melt white chocolate chips as directed in a separate bowl.
Use a spoon to scoop out cake and roll into balls. Dip into white chocolate and set on wax paper to harden.
1 serving is 2 truffles
Serving Size: makes approx. 50 Truffles
