BBQ Beef (CrockPot)

Ingredients
6 lb Beef Round (leanest beef)1 cup cider vinegar1 cup ketchup3 tbsp brown sugar1 tbsp mustard1 cup molasses (I used sugar free maple syrup)1 tsp salt1 tsp pepper1/2 tsp crushed red pepper flakes2 tbsp minced garlic2 tbsp minced ginger6 slices pineapple
Directions
place 2 slices of pineapple on bottom of crock
place roast on top of pineapple and season with salt and pepper
Mix all other ingredients (except pineapple) and pour on top of beef
Lay last 4 slices of pineapple on top of beef
Cook on high for around 6 hours
Lower temp to low and cook till beef is tender and falling apart (cook times will vary according to crock pot)
(Freezes well for reheating)
