Cream of Cauliflower Soup w/creme fraiche

Ingredients
2 TBS Canola Oil1 large Leek, chopped3 stalks celery, chopped1 large carrot, chopped8 oz. pkg. sliced Portebella Mushrooms1 small head cauliflower, chopped6 c. chicken broth (Knorr home-style)Bouquet Garni: 1 large Bay leaf, 1/2 tsp. tarragon, 1 tsp. peppercorns2 c. Silk light original soy milk8 oz. Creme Fraiche
Directions
Saute vegetables in oil briefly; add broth & bouquet garni. Simmer until vegetables are tender. Stir in Silk & Creme Fraiche. Heat through.
