Warm Brussel Sprout Salad

Ingredients
Directions
1 lbs Brussell sprouts4 cups baby spinach (chopped)3 cloves garlic (minced)1 tbsp EVEOsalt and pepper1/2 fresh parmesean cheese4 tbsp light cesear dressing1 ciabatta bread stick (cut into 1 inch cubes)
Wash and trim end off sprouts, slice in half, then slice eash half so you get shredded sprouts, rinse w/ cold water
sprinkle w/ S+P
mix oil, garlic and sprouts in shallow baking dish
Roast at 425 for 25 min stir so they don't burn (allow to cool slightly)
Toast bread til firm in oven after sprouts are done (10 min)
Mix all ingredients in large bowl, serve immediately.
Serving Size: Makes 6 1.5cup servings
