Maura's 100% whole wheat dinner rolls

320 g 1% milk1 egg, optional (included in nutritional data)500 g whole-wheat flour (if you grind it yourself, use a little less liquid)1/4 cup vital wheat gluten75 g sugar10 g salt6 g yeastabout 2 T butter (use less if you want)
Put the ingredients in the bowl of your bread machine in the order the manufacturer says, or just mix them in a bowl if you're using a mixer or your hands. Run on the "dough" cycle of your bread machine. When the dough is done, divide it into 12 equal-sized balls and set in a buttered 13"x9" baking dish. Cover with a clean towel or an oiled piece of plastic wrap and allow to rise until they're touching each other (about an hour, depending on the heat in your kitchen). A few minutes before they're finished rising, turn the oven on to 350. You can brush the tops of the rolls with egg wash or melted butter, but that's optional. Bake 25 minutes or until they're nice and brown like the picture. Remove and cool on a rack out of the baking dish, or the bottoms will get soggy, and who needs a soggy bottom.
