Light Green Bean Casserole

Ingredients
2 cup fresh green beans- cut into 1" chunks1 cup cream of mushroom soup1/2 cup unsweetened soy milk1/2 cup finely chopped onion1/2 cup three-cheese blend1 T oregano
Directions
preheat oven to 350 degrees. in a sprayed pan, saute onion until translucent, toss green beans with some oregano and black pepper and saute for 2-3 minutes (until their color changes). take off heat and let cool. in a separate bowl, mix milk, cream of mushroom and butternut squash. add the beans and onion and mix. spray small corning ware bowls and pour mix in. cook for 30 minutes or until mix has boiled and then add equal amounts of cheese on top of each bowl. cook for 5-10 minutes or until cheese has melted.


Serving Size: makes 4 small corningware bowls
