Meatless Meatloaf

Ingredients
1 bag of meatless "ground beef"2 large eggs (lightly beaten)1 Tbsp. dried parsley flakes1 tsp. Italian seasoning1/2 c. fine dry bread crumbs1 c. finely chopped onion1/2 c. finely chopped celery1 tsp. EVOO1/2 c. ketchup
Directions
1. In mixing bowl, combine Crumblers, egg, parsley, Italian seasoning and bread crumbs.

2. In small saucepan, cook onions and celery in oil until tender. Add to Crumbles mixture, mixing until thoroughly combined. Generously coat a loaf pan with cooking spray, then press mixture into pan.

3. Bake at 350 for 45 minutes. Spread ketchup over loaf. Bake for an additional 15 minutes or until set.

Serving Size: cut loaf into 5 pieces
This can be doubled.

You can also use 1/2 c. egg substitute instead of 2 lightly beaten eggs.
