Whole Wheat Dinner Rolls

1/2 C water1/2 C fat free milk2.5 tsp. dry active yeast4 T Honey3/4 tsp lite salt1 C unbleached bread flour (divided)2 C whole wheat flour (divided)1.5 T olive oil1/2 C egg beaters
Dissolve yeast and honey in warm milk and water. Let sit for about 10 minutes until frothy on top. Add salt, oil, egg beaters and half of flour. Blend with a mixer for 3-5 minutes then add remaining flour and knead for 5-10 minutes. Place in a warm oiled bowl and cover with a cloth. Place in a warm spot for about 30 minutes or until dough doubles in size.
Punch dough down and roll into 1 inch balls. Place three balls together in each muffin hole to make clover rolls. Cover and allow to rise until doubled. Bake 375 degrees 20 minutes.
For beautiful shiney rolls mix an egg white with a little milk or water and brush on top of roles BEFORE they rise.
You may make dough 5-6 days in advance and keep in frige until ready to use.
Serving Size: makes a bakers dozen in large muffin pan
