Smashed Potato Salad : VEGAN

Ingredients
1/2 lb roasted new red potatoes1 c diced parsley1 c scallions (whites & greens), cut on biasSeasonings to taste: salt, pepper, granulated garlic, Mrs. Dash originalVinegrette: 2 tsp brown mustard2 tsp rice vinegar1 TBSP soy sauce1 TBSP water (or more to thin dressing)
Directions
Using left-over roasted potatoes, smash with your fingers. Add to bowl along with parsley, scallions, vinegrette, and seasonings. Stir and refridgerate to allow flavors to meld.
