Peach Applesauce Cakes

1/3 cup applesauce1/3 cup sugar1 egg white1 1/4 cups all-purpose flour1/2 tsp baking soda1/2 cup low sugar peach jam
Preheat oven to 375.
Combine applesauce and sugar. Mix well. Beat in egg white. Combine flour and baking soda and gradually add to sugar mixture. Press into bottom of 8" pan. Spread jam over crust within 1/4" if edge. Bake 12-14 minutes or until outside edges are light golden brown.
Serving Size: Makes 16- 2 inch pieces
