3/4 cup Almond Milk, unsweetened1 Tbsp. lemon juice1/2 cup oat bran1 3/4 cup whole oats1 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt1/4 cup chopped walnuts3/4 cup unsweetened applesauce10 dates (chopped)
Preheat oven to 400 degrees. Spray muffin cups with oil and set aside. Combine almond milk and lemon juice in a cup and allow to sit about 10 minutes or until curdles form. Combine dry ingredients in a large bowl. Add almond mile/lemon juice and applesauce, mixing gently with a spook until completely moistened. Let this sit approximately 3-5 minutes while chopping the dates. Stir in the dates but do not over-mix. Spoon into prepared muffin tins, filling almost completely full. Bake 20 minutes until lightly browned. Allow to cool for 10 minutes before removing from pan.
