Pumpkin Cheesecake (Low Carb)

2 (8oz) pkgs cream cheese3/4 cup splenda or sugar if not going low-carb1 (15oz) can pumpkin1 1/4 tsp cinnamon1/2 tsp ginger1/2 t nutmeg2 eggs1/4 tsp salt2 prepared 8" pastry shells (if not going low-carb)
Pre-heat oven to 350 degrees
Beat together cheese and sugar
Add pumpkin and spices
Beat in eggs, one at a time
Add salt
Beat until creamy
Pour into buttered 9" deep dish pie plate (or shells if not going low-carb)
Bake at 350 degrees for 50 minutes or until knife inserted in center comes out clean
Cool completely
Serve with whipped cream if desired
Serving Size: Makes 1 pie divided into 8 servings
