Garlicky Lentil Soup

Ingredients
1 c. red lentils, rinsed and drained2 onions, finely chopped2 large garlic cloves, finely chopped1 carrot, finely chopped2 T. olive oil2 bay leaves6 1/4 c. vegetable stock2 T. red wine vinegarsalt and ground black pepper
Directions
Put all the ingredients except for the vinegar, seasoning into a large, heavy pan. Bring to boil over a medium heat, then lower the heat and simmer for 1 1/2 hours, stirring the soup occasionally to prevent the lentils from sticking to the bottom. Remove the bay leaves and add the red wine vinegar, salt, and pepper to taste. If the soup is too thick, thin with a little extra vegetable stock or water.

    I made this soup using half the recipe. It was good but needed a lot of my own flavorings (spices). I added cayenne and cumin etc. I used 2c water in lieu of 2 of the cups of veg broth. The soup is kind of watery but tastes alright. The oil is not necessary at all! Omit it!
