Flank steak Fajitas

Ingredients
4 tortillas1lb. of flank steak1 green pepper sliced1 red pepper sliced4 slices of onion1/4 cup of jalipano peppers (optional)1 oz of olive oilPeppr Jack Cheese 2 oz.
Directions
makes 4 3/4 cup servings

In a large pan heat olive oil on low heat. Cut your flank steak into 1/4 inch strips and add to the oil. While that has started cut 4 strips of onion into round strips, and then cut the circle in half.
Next cut the green and red peppers into 1/4 inch strips after cleaning out the seeds. aAdd the jalipanio peppers (optional).
Cook on low flam for 10-15 minutes until vegtables are tender.
Spoon ingreadiants into a warmed tortilla shell, and top with pepper jack cheese. Add salsa to taste (optional)

    Everyone liked it, I bought the fajita size shells but to put a 1/4 lb of flank in there and then veggies and light on the cheese holly moley! So I am not sure what size shells are supposed to be used but I measured out the meat and I used 1/8 lb and ate 2 smaller - 1/3/09
