3/4 cup packed brown sugar1 cup peanut butter1 large egg1/2 cup skim milk1 tsp vanilla extract1 1/2 cup whole wheat flour3/4 tsp baking soda1/2 tsp cinnamon1/4 tsp salt1/4 tsp nutmeg1 1/2 cup oats3/4 cup raisinscooking spray
Preheat oven to 350 F. cream brown sugar and peanut butter at medium speed of mixer until light and fluffy. Add egg and beat well. Add milk and vanilla, beat well. Combine flour, soda, cinnamon, salt and nutmeg; gradually add to creamed mixture, beating well. Stir in oats and raisins. Drop by rounded tablespoonfuls onto baking sheets coated with cooking spray; press down lightly. bake at 350 F for 7-8 minutes or until lightly browned. Cool on wire racks
