Best Vegan Banana Bread

Ingredients
3 bananas2 cups flourdash of salt1 tsp baking powder3/4 cup sugar2 tbsp oil
Directions
Preheat the oven to 350*F.
Mist a loaf pan with oil.
In a large bowl, mash the 3 bananas with a fork until mostly smooth.
Add oil, and mix throughly.
Add baking powder and dash of salt to the mixture, and stir.
Add flour and stir until combined.
Pour batter into the loaf pan.
Bake for 40 minutes, or until top is lightly golden and toothpick inserted in center comes out clean.
Enjoy this light fluffy banana bread right out of the oven, or after a few days.
I like to spread applesauce and sprinkle cinnamon on top.

    I added 1 cap vanilla extract, 1 tsp. cinnamon, 1/4 tsp. nutmeg, used brown sugar, used 1/4 cup applesauce instead of oil. Bread was great warm, and can't wait to try tomorrow morning toasted for breakfast. Thank you for posting this recipe! - 12/3/08

    I used whole wheat flour and subbed unsweetened applesauce for the oil in this recipe. it cut out about 40 calories and all the fat and made for a nice sweet bread. it's not as flavorful as traditional banana breads but the recommendation to serve with applesauce and cinnamon makes up for it. - 6/25/07

    Banana bread with three ripe bananas can easily take less sugar. 1/2 a cup is my recipe and I use Canola oil for all of my baking. My recipe calls for 1/4 cup oil. other than that its the same, grandkids make it and eat it for breakfast with frozen blueberries.Beat ripe nanas to liquid More flavor. - 5/10/10

    Delicious! used 1 1/2 C whole wheat flour + 1/2 C Oats instd of 2 C flour. Used 3 tsp Stevia from bulk bin at hlth food store instd of sugar. B/c sugar mass etc not there, I put in 3/4 C unsweet applsauce + 1/2 tsp baking soda as suggstd, + few rasins. Dense + wet baked over hour but Worth It! - 5/22/10

    I would recommend adding some spices like cinnamon and nutmeg. Premixed "pumpkin" spice would be good. Also if you use real sugar try brown sugar. It realy changes the taste and colour. - 7/10/08

    @SharonFrances: If you add egg whites then it's no longer vegan which is the whole point of this recipe. There are plenty of non-vegan banana bread recipes out there. - 5/10/10

    Actually, for the record CHP4GOLF - vegan refers to no animal products, and most bread products have either dariy, or eggs in them...so being a vegetarian working towards Vegan, I appreciate the distinction. - 4/18/08

    This is fantastic!! I used whole wheat pastry flour, applesauce instead of oil, and reduced sugar to half a cup. I added a dash of vanilla and cinnamon, too. I ate it with almond butter spread on top, and it was delicious! - 7/21/10
