Thai Coconut Chicken and Rice

Ingredients
1 tablespoon olive oilsaltpepper1/2 pound boneless, skinless turkey thighs1 shallot, minced1 bell pepper, diced1 1/2 cups snow peas1 cup brown rice1 can coconut milk1/4 cup soy sauce2 tablespoons lime juice1 teaspoon ground ginger2 teaspoons Thai chili hot sauce1/2 teaspoon sugar
Directions
In a large stock pot, heat oil over medium high heat. Season chicken with salt and pepper. Place in hot oil and cook on both sides until golden brown (about 6-8 minutes). Add shallots and peppers. Reduce heat to low, cover and cook for 10 minutes. Add snow peas, coconut milk, soy sauce, lime juice, ginger, hot sauce, rice, and sugar. Bring to a boil then reduce heat to low. Cook until almost all the rice is absorbed (about 40 minutes). Let stand, covered for 10 minutes before serving.
