5 eggs3/4 cup cheese3/4 cup milk1/4 cup cream1 medium onion chopped1 crown broccoli chopped2 tbls buttersalt and pepper to taste
Saute the onion and broccoli in the butter until soft. Let sit to cool while you prepare the other ingredients. Roll out pie dough (I use whole wheat) into a 9-10 inch pie plate. Spray the pie plate before putting dough in. Prick the dough with a fork. In a large mixing bowl, whip the eggs, milk, and cream together. Season as desired. Add in the cheese and the cooled onion/broccoli mixture. Pour batter into prepared pie crust. Pre-heat oven to 425 F. Bake for 15 minutes at 425, then reduce heat to 350, bake until center is firm. About 45 more minutes. Check the pie after 25 minutes to see if crust needs a crust cover.
