1 Tbsp olive oil1 sliced onion1 lb uncooked bloneless, skinless chicken breasts, cut in strips1 sweet pepper1/2 tsp salt1/2 black pepper4 Village Hearth Light English Muffins1 cup fat free Mozzerella Cheese
In a medium nonstick skillet, heat oil over medium-high heat. saute onion until browned and very soft, about 10 minutes. Add chicken and pepper and saute until chicken is golden brown and cooked through, about 5-8 minutes.season to taste with salt and pepper. Spoon chicken mixture down denter of each 1/2 english muffin, place 1/8 cup of cheese. Heat in oven for 15 minutes or until golden brown.
