Plantain (1 medium), 1 serving Olive Oil, 1 1tsp Salt, 1 tsp
Preheat oven to 400 degrees
With a sharp knife slit the skin of the plantain long ways.
Wrap in tinfoil.
Cook for 40 minutes (until soft but not mushy)
Let cool, then remove foil and skin.
Drizzle with olive oil and salt to taste.
Serving Size: 1 serving = 1/3 of the plantain
