1 pound black-eyed peas, dried, boiled and drained with no added salt4 cups Pacific Organic Low-Sodium Chicken Broth1 tbs Canola oil1 cup onion, chopped1 cup celery, chopped2 cups ( 1 14.5-ounce can) Del Monte Diced Tomatoes, No-salt added2 cup diced extra lean ham1 tbs dried oregano1 tbs ground cayenne, or to taste
Cook peas with enough water to cover until soft without adding any seasonings. Drain and set aside. Heat oil in bottom of large Dutch oven and sauté onion and celery until soft. Add chicken broth and scrape any bits on the bottom of the pan, add seasonings, tomatoes and ham; bring to a gentle boil. Add peas to the pot (adding hot peas to a cold liquid will cause the peas to split). Simmer for at least one hour. Serve over rice.
