Curry Goat (Slow Cooker)

Ingredients
200g cauliflower, bite-sized138g onion, chopped into big pieces215g carrots, medallion-sized1 can 540mL diced tomatoes aylmer accents spicy red pepper3 tbsp Jamaican-style curry powder1 tsp thyme 1kg (2.2 lbs) stewing goat, bone-in (est. approx 950g meat)1/4 cup coconut milk1 cup water 1/2 cube knorr's beef bouillon
Directions
Peel and chop the carrots, cauliflower and onion. Dump into crock pot with broth, diced tomatoes, and spices. Mix well. Add the goat. Cook on low for 6-7 hours. Add coconut milk and cook on high for another hour or so.

Serving Size: 1797g total, 4 servings 450g ea.
