Rustic Winter Pasta with Butternut Squash

Ingredients
2 tbsp olive oil1 medium onion, chopped2 clove garlic, chopped1 medium butternut squash, rinsed and cubed1/4 to 1/2 cup balsamic vinegarRosemary, salt and pepper to taste4 oz mushrooms, chopped2 cups swiss chard, chopped2 cups shelled edemame~5 cups cooked whole wheat spaghetti Parmesan Cheese (optional)
Directions
Heat olive oil in large skillet, add onions and garlic and allow to carmelize. Add butternut squash, balsamic vinegar, rosemary, salt and pepper. Cover and let squash cook until just tender (~10 minutes). Add water if necessary. Add mushrooms, edemame, and swiss chard. Cover and cook until swiss chard is wilted (~5 minutes). Serve over hot spaghetti and sprinkle with parmesan cheese.
