Pea salad

Ingredients
bacon 2 strips fried2 tbs chopped onion1 bag frozen peas8 tbls mayonaise2 hard boiled eggs chopped1/2 c colby/cheddar cheese in small cubes
Directions
fry bacon and drain and crumble
mix all ingrediants and refrigerate at least one hour before serving

    I KNOW it's good! I do a very basic version with no bacon, using low sodium or no salt canned peas, 2 oz Cabot's 75% reduced fat sharp cheddar, and Smart Balance mayo. If I'm indulging, I add the bacon bits you can get in a jar or pkg in the salad making aisle of the grocery store. - 12/6/11
