Flour Tortillas, 1 tortilla (approx 12" dia) Spinach, fresh, 15 leaf*zuchinni, .25 cupGreen Peppers (bell peppers), 2 tbspOnions, raw, 1.5 tbsp chopped *Green Chili Peppers, canned, .125 cupMonterey Cheese, .5 cup, dicedCilantro, raw, 2 tbsp *** measurements may not be exact, adjust to your liking.
place flour tortilla in dry pan over med heat, sprinkle with cheese. In a seperate pan add all the veggies and cook to desired doneness. I like veggies a little on the crisp side. add veggies to one half of the tortilla and fold other half over. Remove it from the pan when the tortilla is slightly crisp.
