Black Bean & Corn Salad

Ingredients
1 14.5 oz can sweet corn1 14.5 oz can black beans1/4 cup chopped onion1 or 2 plum tomatoes chopped 1/4 cup chopped cilantro3 tbsn lite italian vinagrette dressing1 tbsn apple cider vinegar3 tspn sugarsalt and pepper to taste
Directions
Drain the 14.5 oz cans of corn and black beans and mix together in a bowl. Chop the onion, tomato and cilantro and add to the corn and beans. Mix in the remaining ingredients. Refrigerate at least two hours to allow the ingredients to marinate together. Great as a side or low fat snack.

Makes about 6 1/2 cup servings
