Eggplant Veggie Burger

Ingredients
1 eggplant, peeled and diced1 tbsp butter1 tbsp chopped scallions.5 tsp black pepper1 clove garlic.5 cup Italian style breadcrumbs.25 tsp salt.5 cup shredded cheddar cheese
Directions
saute eggplant in butter until very soft, about 15 minutes
mix eggplant and all other ingredients together, let rest in refrigerator for half an hour
form into three equal patties
coat saute pan with cooking spray, fry patties till dark brown, about 5 minutes per side
