Radicchio Risotto

Ingredients
White Rice, glutinous, 1 cup White Wine, 8 fl oz Onions, chopped, 1 small Garlic, 2 cloves mincedRadicchio, 2 cup, shredded Parmesan Cheese, hard, 1 oz gratedOlive Oil, 1.5 tbsp Chicken Stock 3 cups
Directions
saute the onion and garlic in 1 tbsp of olive oil until soft. Add the rice and stir constantly for 1-2 minutes. Add the white wine and simmer until absorbed into the wine. In a separate pan simmer the chicken stock. Add the radicchio to the rice and add 1 ladle of chicken stock. Stir occasionally until the liquid is absorbed into the rice. Continue this until the chicken stock is gone. Remove from heat, add the remaining olive oil and parmesan cheese, stir until the cheese is mixed in and serve.
